The process of lnteresterification involves re-organizing the fatty acids esters between as well as within triglycerides. The outcome of this process is the modification in the physical properties of the fats/oils. Interesterification is the interchange of the intra and inter molecules of fatty acids on the glycerol which acts as the foundation or base of triacylglycerols. In this entire process, the commonly used catalysts include ethylate and methylate that are applied by combining hydroxides of Na/K, Na/K alloy and glycerol. This reaction takes place at around 85-90°C low temperature and in presence of very low rates of catalyst (0.1% in case the starting material is purified and dried).
